BBQ Chicken Masterpiece


Pizza is my obsession du jour. I suppose it's a step up from my usual burger fixation— but that's negligible at best.

Since I'm not in favor of a rapidly expanding waistline (or depleting bank account), I've decided to take this bull by the horns and make some pizza at home. Not just ANY old cheese or pepperoni— but BBQ chicken!

I started out with the pulled chicken slow cooker recipe from a few posts ago. I made a few adjustments to the recipe to cut down on the tanginess and pump up the heat. I also added another teaspoon or so of honey. I was in a time crunch, so I put the chicken on high for about 3 hours.


I hit up Trader Joe's for their whole wheat, pre-made pizza doughs. They also have regular and garlic and herb. 99 cents a bag is unbeatable and so worth it. I bought a bunch and tossed them in the freezer.


I tried to make it look like the pros. It took way longer than I ever imagined... probably because I can't toss it up over my head— yet.


From the first layer up: chicken and bbq sauce, red onions, mozzarella, smoked gouda. Then REPEAT. Top with green onions.

Loooved this pizza. It was absolutely delicious, and I can't wait to make another. Not sure which toppings to try next, but I think I could charge for this pie!
